[contains ad/werbung] I created this super delicious peanut sauce /dressing…call it however you want ….without using any peanut butter. Awesome isn’t it! Well, not that pb is a bad thing but in this case you won’t miss it, I promise!
It’s perfect for salads of all kinds. I had it with a raw lentil salad, means raw veggies and cooked lentils though… and that was seriously life changing ❤
Fat source were hazelnuts and hemp seeds – you remember what we have learnt about omega3s in my recent blog post about a healthy diet 🙂
2 heaped tbsp peanut flour (by KoRo *)
1 tbsp turmeric spice (I used a latte spice mixture which is sweetened with erythritol. Just use common turmeric but make sure to add pepper ⇒ increases bioavailability of the curcumin (!) and add an additional sweetener)
optional: sweetener* (I recommend erythritol (Erythrit)* or xylitol but you can simply use coconut blossom sugar etc. of course)
pinch of salt
1 tsp mustard
some lemon juice
simply mix all ingredients 🙂
For the salad:
80-100 g green lentils (dry weight)
1-2 tbsp cider vinegar
1/4 fennel bulb
baby leaf salad mix
hazelnuts (by Koro *)
- Cook lentils according to package (usually 20-25 minutes). Add cider vinegar when they’re done
- Peel fine stripes from the carrots using a potato peeler. We want to get those thin carrot papardelle. They look pretty and I imagine them to taste better than any other manifestation of the orange root 😀
- Cut fennel and kale into thin stripes using a knife this time 🙂
- Put salad greens into a bowl, place veggies on them, add lentils, pour over dressing, top with nuts and seeds and…
- ENJOY! 🙂
