You guys might know about my preference for combining bananas with pistachio butter. Man, I love pistachio butter!
If you haven’t heard of it yet, definitely check it out and if you are a nut butter addict like me YOU HAVE TO POSSESS THIS! I recommend this brand*.
Pistachio nicecream only was a logical and optimized consequence of my affection for the banana-pistachio thing. It’s incredibly creamy and seriously it tastes like the real one from the ice cream parlour ❤
I love hiding veggies in my nicecream. It’s a nice healthy addition of some extra micro nutrients, moreover it helps stabilizing your blood sugar levels, thus your nicecream makes you full for longer and personally I am just not that sugar-overload person. So nicecream made of plain bananas only never was mine. Some people won’t be able to relate but I like to “dilute” the whole thing. Another advantage is…the ice cream isn’t melting quite as fast, which is great, especially when you have to shoot food pictures for Instagram! 😀
Talking of food photography and styling …to get nicely looking “bigger” scoops I am using this ice cream spoon* and highly recommend it. The other ones I had before where complete bu******
So here we go with a magical recipe that might surprise you at first but if you dare trying it definitively it will convince you!
makes 1-2 servings (1,5 for me 😀 )
200 g frozen bananas*’
300g frozen cauliflower*” (or 200 g frozen zucchini. I recommend cauliflower though because zucchini actually tastes STRONGER! in your final product. You won’t taste the cauliflower, promise!)
1 handful of frozen spinach*”’
1/2 scoop vegan hazelnut protein (optional)
1 tbsp psyllium husks (also prevents the nicecream from melting too fast)
50 g pistachio butter
liquid (I used water but you can use any plant milk oc)
sugarfree chocolate drops
*’cut ripe bananas into pieces and put them in a bag or container and freeze them for at least 24 hours or longer.
*” I use common store bought frozen cauliflower. I don’t cook and freeze it again or sth. Just open the package and put it into your blender 🙂 For this recipe I really recommend using a high speed blender. I guess you’ll never get this creamy texture when using a hand mixer.
*”’I prefer buying fresh spinach and freezing it myself but this only matters if you care about eating it raw (and preventing its nutrients) because store bought deep frozen spinach always is blanched before being frozen.
- Put frozen ingredients into your blender and blend till well combined. Add some liquid if needed.
- Add protein powder, psyllium husks and pistachio butter and blend again till everything is well combined.
- Put your nicecream into a bowl/container and add in some chocolate drops or grated dark chocolate and some minced pistachios.
- You can eat it immediately but I like putting it back into the freezer for another 30 minutes. Especially when you’re taking food photos or just want to serve it attractively this is essential!
